Sweet Potato Pie






This Thanksgiving, Jerry and I will have a quiet dinner at home.  While Jerry prepares to smoke the turkey, I will fix the side dishes.  This year's celebration will be very different from our past family events.  In the past, we would travel from city to city to be with both sides of our families. From Anderson to Ohio or  St. Louis, we were blessed to be with both parents and siblings.


















On Thanksgiving day,  I will spend a portion of the day at church. It will serve as a reminder to serve others and extend the love of God in a practical way.
























Since we we will be eating alone, I am going to prepare a Sweet Potato pie.  This recipe is from www.allrecipes.com, I really want to find Sene's recipe.


 SWEET POTATO PIE


INGREDIENTS

1 (1 pound) sweet potato

1/2 cup butter, softened

1 cup whie sugar

1/2 cup milk

2 eggs

1/2 teaspoon ground nutmeg

1/2 cinnamon

1 teaspoon vanilla extract

1 (9 inch) unbaked pie crust


DIRECTIONS

1. Boil sweet potatoe while in skin for 40 - 50 minutes or until done.  Run cold water over the sweet potato, and remove the skin.

2.  Break apart the sweet potato in a bowl.  Add butter, and mix well with mixer.  Stir in sugar, milk, eggs, nutmeg, cinnamon and vanilla.  Beat on medium speed unitl mixture is smooth.  Pour filling into an unbaked pie crust.

3. Bake at 350 degrees F. for 55 or 60 minutes, or until knife is inserted in center and comes out clean.  Pie will puff up like a soulffle, and then will sink down at it cools.
